What are the odds of guessing a number from 1 to 10?

1 in 10, or 10%, for one guess. Every number from 1 to 10 has the same chance, including 1 and 10.

Can I pick several numbers from 1 to 10 with no repeats?

Yes. Tap “a number” to choose 2, 3, 5 or 10 numbers, and turn on No repeats so they are all different. Ten numbers with No repeats puts 1 to 10 in a random order.
